Loaves of bread are about 20 slices regular slices Frozen and separated with wax paper so no chiseling. It's great toasted or grilled. Come try a sample.
I am excited to be opening Sweet Miri's Cafe & Bakery. With single mom and dietitian responsibilities as well as the cafe, there will be limited hours initially. Once staff have been hired, hours and product selection will continue to expand.
We received such a great response at our open house that we are making sure to have staff and other supports in place prior to our actual opening. We are planning on being operational by April 23rd.
Our Mission is to first and foremost provide everyone with a gluten free safe space. My next goal is to provide yummy comfort foods. Gluten free does not have to be taste free. As humans we must eat to live but we also gain much enjoyment out of eating (or we should) and most of our social interactions revolve around food. I love to bring joy back to those of us with restrictions. I love the challenge of providing foods to accommodate whichever food restriction you might have.
Let's talk about special requests. I am about to suggest you put in special requests for items based on other allergies. Most of my baked goods freeze well. In fact some seem to like to be frozen. So if you want muffins, cakes, breads, rolls, and pastries you could order a dozen at a time, freeze them and enjoy them over time. Some items do better frozen as a batter then you can defrost the container and bake them yourselves and have yummy from the oven treats when you want them. this would be my cookies. You can order items in either form.
Let's talk about other allergy concerns:
Nuts: My facility is peanut free although some products may have been made in a facility where peanuts are processed. However, I use almond flour in many of my baked goods. Additionally, many of my rolled pastries (Rugelach) contain walnuts. I am able to use a non-nut assembly area to make nut free alternatives when special orders are received. As I become more organized, I will provide a list of items which are overtly nut free. I do not use much soy (except with the asian sauces which some have gf tamari) and I use regular smart balance in my pastries unless special ordered to be soy free, however some products may be made in facilities which process soy. If you need to be soy free, please mention it before ordering.
Seeds: I use flax seeds and flax meal, chai seeds, and caraway seeds in my breads, rolls, and homemade pizza dough. The seed-free bread is the Sweet Sorghum Bread. I only use sesame seeds when chinese food is prepared. (yes we will be having asian night soon!).
Dairy: my breads, rolls, and pizza dough are all dairy free naturally as are a good deal of my baked goods. When specially ordered, I can make most of my products which contain dairy to be dairy free. I do not carry cheese substitutes because in my experience there isnt a suitable substitute that most people enjoy and it goes to waste.
Sugar: I am working on a sugar free bread (my current breads do have a bit of honey and sugar in them). I can work with stevia if necessary but it really alters the product since it changes the ratio of dry to wet ingredients. This would be by special order. My pastry dough is sugar free and I make amazing naturally sweetened apple pie. If there is something you would like to have, please feel free to contact me to discuss options.
Preservatives and other sensitivities: It would be cost prohibitive to carry everything preservative free however I do make most stuff homemade. I can accomodate preservative free meals with advance notice. All of my baked goods are preservative free.
Gums- I use Xanthan gum primarily but do have a few items free from it and I am willing to try some alternatives upon special request.
Eggs: Okay so to make an edible gluten free product, I have found eggs to be essential for most products. However, there are a few items which are free of eggs such as the pumpkin cookies I will endeavor to have on hand daily. I can accomodate special requests for many items.
Sorghum and Tapioca- I am deathly allergic to tapioca so I do not use it at all. the only item i carry with it is a premade wrap from Udi's. I will eventually make my own wraps but not for now. Some people are sensitive to sorghum. I do use quite a bit of it in my muffins but I can accommodate special requests.
